Dim Sum Bo Nay Tea - Foojoy
The pairing of Chrysanthemum blossoms with Pu-erh tea (Bo-Nay) has a long tadition in China's tea houses. These popular inns were known not only for their Dim-Sum light meals but were centers of community gatherings. Pu-erh tea comes from historic plants in China's oldest tea gardens Yunnan Province. Like other Black teas, the plucked leaves are withered, rolled, and heated. But Pu-erh undergoes one step that is unique to this tea: the leaves are allowed to age from several months up to several years. Pu-erh gives a dark, full-bodied brew but the tea is actually mild and smooth, characterized by a distinctive earthy flavor.
